President turning CAC from ‘little university’ back to community college

Jackie Elliott has an analogy she likes to use when talking about changes she’s trying to make at Central Arizona College.
The college’s course offerings have previously been like the Cheesecake Factory’s menu, the CAC president recently told PinalCentral, where students can feel overwhelmed by the number of options. The restaurant chain is known for offering more than 250 menu items.
When she came to CAC two years ago, Elliott said the college was teaching about 1,000 different courses.
